Chef Brian Bower is an Anishinabee Chef, a descendent of the Ottawa and Pottawotmi of Michigan. Chef Brian graduated from Great Lakes Culinary Institute in Traverse City, MI. Chef Maria Santana-Polanco immigrated to the United States from the Dominican Republic in 2004. She was raised in a family that loved cooking traditional food. Having graduated with a degree in Culinary Management from Grand Rapids Community College, this has allowed her to build on her Caribbean/ Latino style of cooking.
